Phos 1 is a tripolyphosphate. This product, in synergy with salt, increases the water retention capacity of the muscle and facilitates the extraction of salino soluble proteins.
If you add this product to brine, it will reduce water losses during the cooking cycle and increase slice firmness in cured meat products.
