What is potassium lactate?
Potassium lactate allows to increase the shelf life of meat products. It is made of bacteriostatic agents that slow down the growth of microorganisms. Potassium lactate produces an effect similar to salt, but without the salty taste.
The recommended usage is 20 to 30 grams per kilogram of product.
Potassium lactate is not used very often because it is not fully efficient against Listeria. People prefer to use Safe-T-Lac.
