Tapioca starch is a starch extracted from cassava root. Cassava is a shrub and its roots are a major source of carbohydrates. The starch extracted from the root is washed and then dried to form a white powder. If it was not contaminated, tapioca starch is usually gluten-free. It is an excellent binder to retain water in a product.
