Originally from Central Asia or Siberia, tarragon is grown mainly in France and the United States. It holds a special place in French cuisine. Its leaves, slightly aniseed and peppery, retain their flavour well when dried. However, they must be protected from light to preserve their colour. Tarragon goes very well with dill, pepper and green onion. It is a good seasoning for white meats, marinades, beef, veal, stuffings and minced meat. It must be measured carefully because of its strong flavour.
