Brine for Smoked Meat

Originally meant for the preparation of brine for smoked meat and pastrami. However, some butchers also use it for the preparation of pastrami made with turkey or pork.

Recipe: Use one unit of 5.95 kg with 50 litres of water. Inject 3 times at 30% to get 50% yield. Rub with the spices.
