Gelatin is a food additive derived from collagen (which is the most common animal protein).

Gelatin forms a thermoreversible gel, which means it is solid when cold and liquid when hot. The gel strength is measured with a scale called “Bloom”. We offer gelatin with 175 and 200 Bloom. If the Bloom value is high, the gel will be firmer.
